What offset would I need?

I have a 2006 WRX sedan and have started looking into changing out the rims and going with something a little wider. I looked up the stock specs which are:

17x7
5x100 lug pattern
55 offset
215/45zr17 tire

What wider width would be good for the 06 WRX that would not cause rubbing or need fender rolling?

I'm in North Texas and hardly ever see any snow. My 2006 WRX is white, so I have been thinking of maybe going with a bronze rim. If I decide to stay with the same 17" diameter, I should stay with a 45 series tire as well, don't you think?

No, you shouldn't. Remember that "45" is NOT a measure of sidewall height. It's a ratio between width and sidewall. It means 45% of your tire's width between the tread and the wheel. To give you some examples, a 255/40R17 tire is actually taller and has more sidewall than your stock tire despite being 40 sidewall. Why? Because it's wider. Do not look at a ratio number to judge sidewall, you must look at the actual sidewall height. Look at the total diameter. Your stock tires are 24.6" tall.

Also, the WRX has relatively tall gearing and benefits from a short tire. The correct tire height is anything between 24" and 25".

I think gold wheels are tacky, particularly on a white car but each to their own. They make the wheel I sent you in gold and they also make a half dozen other styles in that size with those dimensions in gold as well. You can also find wheels in 17x8" and approx +48 offset from discounttire.com who is a vendor here or from tirerack.com who has a wide selection of some of the more high end expensive wheels.
