What does everyone uses to clean their seats and carpet with? Not just vacuum either, what shampoo or chemical do you use or think works best?

For spots, I use the single use Shout Wipes you get in the detergent isle. They're a life saver in those times where you're pulling out of a Taco Bell and go "Oh F***, my taco!... oh F*** my seat!" times. They do a good job of pulling out stains. I always have atleast 4 in my center console at all times.
