another easy way to tell if the water pump is working is take the cap off, and rev it and you can watch the water/coolant move down when you gain rpm's and when you let off it will come back up (sometimes it will overflow a little bit)

-sounds like a boat-

i put the one in with the 1/8" hole in the top, it cools fine when up to 205*, cools right down, but takes forever to get to operating temperature and the oil is to cold. Also, when run hard, the temp. gets down to 145* lol, im gonna try a very small hole in one and try that out... This is a real crapshoot as i know my waterpump in fact does pump water, its just the Tstat that sticks. One i had in there really stuck, had to keep it in 4th gear at 60 mph to keep the rpms up to stay at 201* !!!!! That was a nervous ride home from work.

It has to be air in there somewhere grrrrr.

Sounds to me as if the water pump has a differnt impeller not moving enough coolant when going down the road OR you have a head gasket issue that shows up under stress.
