Subaru and Scooby, they both come off the tongue fairly the same way. There's really no "reason" why they're called "Scooby". And it can be used for all Subarus, but I've mainly heard it used when referencing the Impreza line (Impreza, WRX and STi).
I think that the naming of the WRX must be related to the self-introductory, eponymous howl of the cartoon dog, "Scooby dooby doooooo," in two ways. The howl sounds like one a WRX driver might want to make, after a drive, high on the adrenalin provided by driving his Scooby. And also perhaps as abbreviation of 'Scooby Doo', which sounds like a poor conjugation of 'Scooby does', and my Scooby does.
