Ride the clutch my friend, dont side step it. There is a really good article floating around here somewhere about take offs. Basically it talks about how to let the clutch absorb to the initial torque not the tranny gears.
I have found when taking off fast I give it about 2/3rds throttle and the let the clutch fast but smooth to about 2/3 to 3/4 engagement and let car get some momentum and then full gas and off the clutch together smoothly. That thread gives a much more detailed conceptual idea of how to do it. Maybe someone will chime in with a link. Just be careful of the tranny. Clutch is cheap to replace in comparison.
