There are different types of winter tires, just as there are different types of all season tires. There are more extreme ones designed to deal with snow primarily, and there are more dry condition focused more general "cold weather" type winter tires. If you were leaning towards an all season before, you probably want to be looking more at the performance end of the winter tire line.

The LM-60's are a middle ground type tire. If you want something that will handle well when the roads are clean too, you might want to check out the already mentioned Dunlop Winter Sport 3D. They're available in 225/50R16 or 205/55R16 which will both fit your stock wheels. 225 will handle better but does cost you an extra $125 or so for the set. If you don't care about absolute lateral grip very much, the 205's are fine.

The best winter tire for dry grip is probably the Michelin Pilot Alpin PA3 but they're not that good in the snow. You'd probably need some 17" wheels for em too.

Also, don't take my word for any of that. Check out some reviews on Tirerack, do some research, etc.

My stock (all season) tire size was 215/45/17 on 17x7 stock 2007 WRX wheels.

I chose 205/50/17 Dunlop Winter Sport 3D winter tires for my 17x7 stock wheels since I live in MD and generally see more "cold" days in winter than "snowy" days. The Winter Sport 3D is more of a "cold performance" tire and less of an actual "snow" tire (like the Bridgestone Blizzak) so that works out well for my area. The wheel/tire size keeps my top to bottom diameter and rolling circumference really close to stock to help with speedometer accuracy and gearing, the slightly narrower tread patch helps me cut through the deep stuff when I need to, and the slightly bubblier sidewall helps protect the wheels from curb rash if I happen to slide into or brush up against anything.

There really is a lot to think about.

Dang, can't find the 3D in the stock sizing on Tire Rack. Would 225/45/17 be okay for sizing?

That would be better than stock sizing for west chester winters. So, YES+
