Version 6 STi Heads on 257 Short Block

Hey I have a friend selling some Version 6 heads and I was wondering if they will work with a 257 shortblock and if so would they be better than 205 heads for a hybrid build

You can't just change heads by themselves. This would require a lot of expensive changes and no, it wouldn't substantially help anything.

Your heads are DBC and the EJ207 heads you're talking about I'm pretty sure are DBW. That would mean a new ECU, harness, petals, and similar. Not a small mod.
