You should be alright going from different temperatures, I use the same weight oil and the same coolant in my car and the temperatures differ from in the negatives to above 100 sometime and it still runs fine. Your car is going to run better at lower temperatures because the air is denser at cooler temperatures and mixes with fuel better. A lighter weight oil wouldn't hurt(say 20w-50 as compared to 5w-30) but isn't going to be that much of a difference.
With the low volt problem you could get your alternator rewound but I would suggest getting a capacitor installed instead, It will help with your headlights or interior dimming, etc, but it might not fix the problem with "LOW VOLT". The problem might be elsewere in your electricial system.
